Quick and Easy Protein Patty Bites Recipe

I am all about quick and easy meals. Today I will be sharing a delicious recipe for Protein Patty Bites! This is a recipe that I have been making for years.

As a single mother, I thrive on quick, convenient, easy meal options. Delicious and nutritious dinners for myself and my daughter are always the goal. I recommend these tasty protein patty bites for the perfect breakfast, lunch, snack, or dinner! I try to have some premade and stored in the freezer for those busy days when time is limited. The protein patty bites are great for on the go meals. I like to combine these yummy patties with salad, chopped veggies, mashed cauliflower, or side of sauteed greens. This recipe can easily be modified in several ways to meet your personal needs and tastes! I have used the base of the recipe to make a breakfast sausage like variation.

Ingredients:

  • 1 pound of ground protein (chicken, beef, veal, turkey, tempeh or 2 cups cooked and strained lentils)
  • 1/2 cup chopped onion
  • 3 garlic cloves
  • 1/2 cup chopped bell peppers
  • 1 cup chopped spinach
  • 1 cup chopped mushrooms
  • 1/4 cup breadcrumbs (gluten-free breadcrumbs work well too)
  • 1/4 cup hemp seeds
  • 1/4 cup nutritional yeast
  • 1 tsp jerk sauce or spice (optional; can be replaced with a bbq sauce)
  • 1 tsp of seasoning (herbs or seasoning salts of your preference)
  • Salt and pepper to taste

I prefer an organic household, so I generally use organic ingredients, but nonorganic foods work also!

Directions:

To start, preheat your oven to 350 degrees. Finely chop the vegetables and herbs, place all of the additional ingredients in a bowl, adding the ground protein last. Mix well then form into small patties with your hands. Once made into a patty place on a lightly greased pan (tip: you can mold the mixture into a lightly greased muffin tin for a perfect patty!), The patties cook for a total of 20 minutes. It is recommended you flip the patties over halfway through cooking. When flipping the patties, if you find there is excess juice, you can drain the patties, and place them back in the oven to cook for the last 10 minutes.

Let patties cool for a few moments, and then enjoy! Delicious on their own, even better topped with your favorite toppings and condiments! I love placing the patties over a bed of greens, topped with Garlic Mayo and sauerkraut! Here is a bonus recipe for homemade garlic mayo.

Garlic Mayo Ingredients:

  • 1/4 cup mayonnaise/veganaise
  • 1/4 tsp crushed garlic
  • 1/2 tsp Italian seasoning
  • 1 pinch sea salt/Himalayan salt

If you premade the patties for later use, allow them to cool and then place them in Ziplock BPA-free freezer bag or reusable container and freeze.
